This time the recipe is from chef Manuel Gallardo of <a href=\"https:\/\/gruparenal.com\/en\/arenal-restaurant\/\">Arenal Restaurant<\/a>.<\/span><\/p>\n<p><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">Before we continued with the recipe we wanted to share the wonderful properties of this food.<\/span><\/p>\n<h2><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\"><strong>Mushroom properties<\/strong><\/span><\/h2>\n<p><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">Mushrooms are not only a delicious food. Besides their flavor they have many more properties. According to the Spanish Nutrition Foundation, mushrooms have many nutritional properties beneficial to health, so they are ideal and suitable for most people. Garlic cloves<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">1 branch Fresh thyme<br \/>\n<\/span><\/li>\n<\/ul>\n<h4><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">How to prepare the turbot:<\/span><\/h4>\n<ul>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">Simmer the olive oil together with the garlic clove and thyme.<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">When reaching 110 degrees C, we will submerge the turbot and leave it at 95 degrees C for about 8 minutes for cooking in oil.<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">Next, we will take it out carefully and let it rest on an absorbent paper for a few seconds.<br \/>\n<\/span><\/li>\n<\/ul>\n<h3><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">Black trumpet mushroom cream:<\/span><\/h3>\n<h4><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">Ingredients:<\/span><\/h4>\n<ul>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">60 g Fresh Black Trumpet Mushrooms<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">1 piece. Red onion<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">1 apc. Garlic clove<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">Half a Leek<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">100 cl White fish broth<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">30 grams Butter<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">30 cl. Milk cream<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">20 cl. White wine<\/span><\/li>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">10 cl. Cognac<br \/>\n<\/span><\/li>\n<\/ul>\n<h4><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">How to make the cream of Black trumpet Mushrooms:<\/span><\/h4>\n<ul>\n<li><span style=\"font-family: helveticaneueltstd-c; color: #6a6b6a;\">Sprinkle butter, garlic, Figueres onion and leek.
