font-family: helveticaneueltstd-c;\">The first time you should be accompanied by someone with knowledge about mushrooms.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Do not collect mushrooms that are not known.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; It is essential to study what sets them apart.<br \/>\n<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\"><strong>Today we share a recipe from our Chef Manuel Gallardo of <a href=\"https:\/\/gruparenal.com\/en\/arenal-restaurant\/\">Arenal Restaurant<\/a>.<\/strong><\/span><\/p>\n<h2><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\"><strong>Brush fritters with mango and ginger compote<\/strong><\/span><\/h2>\n<h3><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\"><strong>Preparing mango compote<\/strong><\/span><\/h3>\n<h4><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Ingredients:<\/span><\/h4>\n<ul>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">250g crushed mango pulp<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">1piece whole mango<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">50g Fresh ginger<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">150g brown sugar<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Half a Fresh Lime<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">50 cl Bottled\/filtered water<br \/>\n<\/span><\/li>\n<\/ul>\n<h4><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Development:<\/span><\/h4>\n<ul>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Peel the mango, dice into 0.5cm cubes and set aside.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Peel the ginger and chop it as small as possible.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Put the sugar, water and lime juice on the heat to make a light caramel.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Next, add the cut mango and heat<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Leave on a low heat. For about 10 minutes or until it reaches the desired texture.<br \/>\n<\/span><\/li>\n<\/ul>\n<h3><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Preparing ceps fritters<\/span><\/h3>\n<h4><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Ingredients:<\/span><\/h4>\n<ul>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">1 kg Fresh Ceps (wild mushrooms)<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">250g Butter<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">1 litre Milk<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">50g Garlic and parsley chopped<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">650g Flour<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">6 Eggs<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">8 gr Salt<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">1 tablespoon Xanthan gum, ground<br \/>\n<\/span><\/li>\n<\/ul>\n<h4><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Development:<\/span><\/h4>\n<ul>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Clean the ceps of any soil or mud. Wash and chop to small squares and cook.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Sprinkle the butter with the previously chopped ceps and add the salt. ceps<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Add milk until boiling.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Put the garlic and parsley and lower the heat to a minimum for cooking. And, let stand for a few minutes to add the flour progressively and the teaspoon of xanthan. Do not stop mixing with the spatula until it becomes a consistent thickness.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Remove from the heat and keep stirring for about three minutes. So that the temperature drops and incorporate the eggs one at a time to bind into the dough.<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Let stand in the fridge until it cools down and then give the desired shape (Circular, oval.)<\/span><\/li>\n<li><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\">Fry at 190 degrees C for about two minutes.<br \/>\n<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #6a6b6a; font-family: helveticaneueltstd-c;\"><strong>What&#8217;s your favorite mushroom recipe?
